I am still in love with savory squash recipes, and so I still stuff squash, be it Spring or not. This particular version is Vegan, but you could easily use ground meat if you prefer kline schedule it. With ricotta, you get an extra creamy filling, and the sun-dried tomato make for bold flavor.

Squash is an all-time favorite of mine too. I love that you have sundried tomatoes kline schedule and soy crumbles in the stuffing a great combination with the added sweetness of the juicy sqaush it must be so flavorful!
